This is how to make it:
– Washed and grated apples – you can chop it in thin slices or if you want faster results, place them all in a food processor or blender and grind it nicely.
– A little sugar, or you do not need sugar if you add a little sweet apples. We used wild sour apple and 1% sugar of the amount of apples. Sugar is necessary to start the fermentation, it completely disappears in the course of obtaining apple cider vinegar.
– Large glass jar – or less plastic drum. We used a smaller plastic drum.
– Gauze or cotton rug to cover it.
Grate the apples, put them in a plastic drum, add a little sugar, pour water and cover the gauze, leave in a quiet place with a stable temperature of about 20 degrees Celsius. The best place is the basement. After seven to ten days you will feel the smell of vinegar in the room in which you stored it. The smell is very strong so you won’t be able to store the mixture in your kitchen or anywhere in the apartment, it will have to be a basement or some other utility room.
Already after a month you can start testing. Try the vinegar, make sure it is strong enough for you. If you find it appropriate, strain the mixture and pour the vinegar into sterilized bottles.
